These soft ginger biscuits are one of the foods that I can pick up and eat with my fingers. That might not sound particularly special, but when most of your food requires a spoon or a fork it makes a nice change!

The biscuits are soft, but firm enough to hold their shape. They are sticky enough to stay together in my mouth, but not too sticky, and they are sweet without being overly sweet. I like to eat them just as they are, but they are also delicious with butter and/or jam.

The recipe is adapted from 'Ginger Stars' in Susanna Booth's book *Sensationally Sugar Free* published by Octopus (octopusbooks.co.uk).

#### The ingredients

Apart from date paste, this recipe uses general store cupboard ingredients. I like to incorporate some wholemeal flour for its deeper flavour and extra fibre, and I love the combination of ground ginger, dates and bananas. These ingredients can also help to support an unhappy digestive system which is an extra bonus!

##### Date paste

I came across this [date paste](https://www.buywholefoodsonline.co.uk/natural-date-paste-500g.html) at [Buy Wholefoods Online](https://www.buywholefoodsonline.co.uk/) earlier this year, and I was really excited to find a healthy, premade paste to use in place of whole dried fruits (I'm always excited to find healthy 'short-cuts'!).

It is naturally moist (great for texture modified dishes) and sweet with a rich caramel flavour. It comes in a dense, solid block, but it is easy to soften with a fork and a bit of hot water. It is worth noting that it is not completely smooth.

#### Kitchen equipment

The equipment I use to make this recipe includes:
Kitchen scale

Nylon sieve
Food processor
Rolling pin
Cookie cutter (mine is 6.5 cm diameter)
Pastry brush

### Method

#### Easy to chew

1. Preheat the oven to 180°C / gas 4 / 350°F and line a large baking sheet with baking parchment.
2. Mix the plain flour, wholemeal flour, baking powder and ground ginger together. Sift into a bowl (you can use the same bowl later, to mix everything together).
3. Place the contents of the bowl, along with ⅛ teaspoon [((Ad)dash)](https://judeshealthjourney.com/recommend-dexam-mini-measuring-spoons) fine sea salt, into a food processor fitted with the knife blade.
4. With the motor running, add the date paste a piece at a time until it is evenly distributed. Then, with the motor still running, add the butter a piece at a time until the mixture resembles breadcrumbs. Set aside.
5. Put the banana into the bowl and mash thoroughly with a fork. Then tip the contents of the food processor into the bowl and gently mix the dry ingredients with the banana, until you have a soft dough. I find a small, flexible silicone spatula the best way to do this. If the dough is too sticky, add a little more flour.
6. Tip the dough onto a worktop that has been dusted with flour, and roll out to a thickness of about 5 mm. Cut out rounds or other shapes, rerolling the trimmings as necessary, until you have used up all the dough. Place onto the baking sheet.
7. Brush with the milk, then put into the preheated oven for 12-15 minutes until risen and slightly golden. Cool on a wire rack.

These are best eaten within a couple of days. I haven't tried freezing them as they never last long enough!
